  • 1 cup of water

  • 2 teaspoons salt
  • 2 packages of yeast (or 5 teaspoons)
  • 1 cup of warm water
  • 2 eggs
  • 1 cup of mashed potatoes (make sure they’re cooled)
  • 6.5-7.5 cups of bread or all-purpose flour

Instructions:

  1. Prepare the Wet Ingredients: In a saucepan, combine 1 cup of water, 1/2 cup of butter, 1/2 cup of sugar, and 2 teaspoons of salt. Heat over medium heat, stirring occasionally until the butter is melted and the mixture is well combined. Once melted, remove from heat and let it cool to room temperature.
  2. Activate the Yeast: In a separate bowl, dissolve 2 packages of yeast (or 5 teaspoons) into 1 cup of warm water. Let it sit for about 5 minutes until it becomes frothy and bubbly, which means the yeast is activated and ready to work its magic.
  3. Mix the Dough: Stir in the 2 eggs into the yeast mixture. Next, add the 1 cup of mashed potatoes (make sure they’re cooled so they don’t kill the yeast!). Then, slowly add the cooled butter mixture to the bowl. Once everything is combined, begin adding the flour, 1 cup at a time, until the dough starts to come together. You’ll need 6.5-7.5 cups of flour, depending on how sticky the dough is. This dough will be sticky, so don’t worry!
  4. Knead the Dough: On a lightly floured surface, either use your hands or a stand mixer to knead the dough for 8-10 minutes, or until it becomes smooth and elastic. You may need to add a bit more flour to help with the stickiness, but be careful not to add too much. You want the dough to stay soft and slightly tacky.
  5. First Rise: Grease a large bowl and place your dough in it, turning it once so it’s lightly coated in oil. Cover the bowl with a clean towel and let the dough rise in a warm place for about 45 minutes, or until it’s doubled in size.
  6. Shape the Rolls: Once your dough has risen, punch it down to release the air. Then, roll the dough into small balls—about 1 inch in diameter, or the size of your choice. Place the balls of dough on a greased baking sheet or in a greased 9×13 pan, leaving a little space between them. Cover the pan with a towel and allow the rolls to rise for about 30 minutes, or until they’ve doubled in size.
  7. Bake the Rolls: While the dough is rising, preheat your oven to 350°F (175°C). Once the rolls have risen, bake them for about 20 minutes, or until they’re golden brown on top. Keep an eye on them to avoid over-baking.
  8. Enjoy: Once your rolls are baked to perfection, take them out of the oven and let them cool slightly before serving. They’re best enjoyed warm, with a pat of butter, but they’ll also keep well for a day or two if stored in an airtight container.
