Ingredients
- ½ cup (1 stick) salted butter
- 8–12 fresh sage leaves
- Freshly cracked black pepper
- Freshly grated Parmesan cheese (optional)
- Reserved pasta water, if needed
Instructions
- Melt the butter in a large skillet over medium heat.
- Continue cooking, swirling the pan occasionally. The butter will foam before the milk solids begin turning golden brown.
- Once the butter develops a nutty aroma and amber-colored bits appear on the bottom of the pan, add the sage leaves.
- Cook for another 30–60 seconds, allowing the sage to become fragrant and lightly crisp.
- Immediately remove the pan from the heat to prevent the butter from burning.
- Toss the hot cooked pasta directly into the skillet. Add a splash of reserved pasta water if needed to help the sauce coat every noodle.
- Finish with freshly cracked black pepper and Parmesan cheese, if desired.
Serve immediately.
